Premium Quality White Wines
These wines are produced of selected overly ripe white grape varieties. Grapes for these wines are hand picked into boxes, in which they are carried from the wineyard to the grape crusher.
During destemming grape berries fall in a container or press, after which they undergo cold maceration process for a few hours in order for aromatic substances to be extracted and colour from the skin of the berry to be removed. The press presses the mash, and after a few hours of settling down pumped must is added yeast culture. In the container the must ferments at a specific computer-controlled temperature.
This is the method for producing fresh fruit aromatic variety wines, which give our cellar its particular reputation.
White wine varieties from the Prus Wine Cellar include Welsch Riesling, Riesling, Sauvignon, Pinot Gris, Yellow Muscat and the white trio variety (composed of three white sorts, Yellow Muscat, Traminer and Sauvignon).
Bottles of premium quality white wines, semi-dry and semi-sweet wines contain an orange label and an orange wine bottle cap.
Premium Quality Red Wines
Grapes for these wines grow on specially selected wet locations on clayey soil, which gives our wine that characteristic aroma and palate, reminiscent of little forest berries: blueberries, blackcurrant, black cherry, etc.
Grapes are hand-picked in the period of full, technological ripeness, which means tannins in grape pips and grape berry are ripe and contain sugar levels ranging from 90 to 100 Oe°. Maceration in the vinificator takes up to 28 days, when biological deacification occurs.
Fully ripe grapes and longer maceration results in full, rich and fruity wines, which are also appropriate for ageing. After pressing, all these premium quality red wines mature one year in classic 1,100l barrels or 24 months in 225l barrique barrels, named after the so-called barrique method.
Red varieties of the Prus Wine Cellar include Blaufränkisch, St. Laurent, Gamay and Cabernet Sauvignon. Red premium quality wine bottles are furnished with a blue label and a blue cap or a violet label with a black cap.
